Tired of being in the same old seasoning slump for your baked or grilled chicken? Keep that jar of olive brine once you’ve eaten all those delicious olives. You can use it to infuse amazing flavor into chicken. And the brine is already made for you! |

INGREDIENTS

- 4 chicken pieces, skin on (2 thighs, 2 breasts)- 1 Cup Wildfare Green Olives Stuffed with Red Peppers* brine- Salt, to taste- Pepper, to taste- Thyme, if desired- Rosemary, if desired |

Combine chicken, olive brine, seasonings, and herbs in a sturdy, leak-proof plastic bag, taking care to force out as much air as possible.

Let marinate in the refrigerator for at least 8 hours, preferably overnight.

Bring to room temperature and pat dry. Arrange on a flat rack in a roasting pan.

Cook in the oven at 350 degrees for 35-45 minutes or until the internal temperature is 165 degrees. Grilling is also a great option and imparts extra flavor. And frying, well sometimes a person just wants some fried chicken!
You might just want to serve this chicken with a pasta salad that incorporates some of the olives pulled from the brine, to reinforce the flavor profile of the meal.
