Madrigal Artichoke Grilled Cheese

Crispy, creamy, cheesy – who doesn’t love a grilled cheese? In this recipe, the artichokes lend a complexity that is not complicated. Comfort food with an elevated flavor profile. And don’t forget the Ajvar dipping sauce!
INGREDIENTS
- ½ 10.05 oz jar of Wildfare Madrigal Artichokes (well drained)
- 1 Cup shredded mozzarella
- 2 Tbsp grated parmesan
- Pinch of kosher salt
- Pinch of black pepper
- Pinch of garlic powder
- Pinch of red pepper flakes
- 4 Slices sourdough bread (or your favorite bread)
- 2 Tbsps Wildfare Extra Virgin Olive Oil
- Wildfare Ajvar for dipping
PREPARATION

Chop Wildfare Madrigal Artichokes into bite size pieces.

Combine artichokes, mozzarella, parmesan, salt, pepper, garlic powder, and red pepper flakes in a bowl.

Place a frying pan over medium heat.

Spoon the artichoke and cheese mixture onto two slices of the bread, dividing equally. Top with remaining two slices. Press down to secure the mixture between the bread slices.

Drizzle 1 Tbsp. of Wildfare Extra Virgin Olive Oil in the heated pan and swirl to coat the bottom. Place the sandwiches in the pan. Toast one side until golden brown with signs of the cheese beginning to melt.

Transfer sandwiches to a plate temporarily and drizzle remaining Tbsp of olive oil in the pan. Brown the other side of the sandwiches, making sure the cheese comes to a gloriously melted state.

Transfer sandwiches back onto plates to cool down for just a minute. Not too long – you definitely want that cheese pull after cutting them in half!

Serve with Wildfare Ajvar as a dipping sauce (either at room temperature or warmed).
