Vegetable Confetti Soup

Colorful, nutritious, and soul satisfying! This is an “eat the rainbow” soup. It may also be a “clean the produce drawer” soup – a wonderful dish to use up what you have in the fridge without waste or worry. When all the vegetables are diced to the same size, they look like confetti – beautiful, healthy, edible confetti! Make this recipe your own!
- 6 Cups vegetable broth (make your own or buy your favorite)
- 1 Tbsp Wildfare Extra Virgin Olive Oil
- ½ Cup red onion, quarter inch dice
- 2 cloves garlic, finely minced
- ½ Cup red bell pepper, quarter inch dice
- 1 Cup carrot, quarter inch dice
- 1 Cup celery, quarter inch dice
- 1 package of Wildfare Freeze Dried Green Peas
- 1 package of Wildfare Freeze Dried Sweet Corn
- 1 15 oz can chickpeas (drained)
- Salt and pepper to taste
Heat olive oil in a large stock pot. Add red onion and garlic. Sauté for 3 minutes.
Add the fresh, diced vegetables and the broth. Bring to a simmer for 10 minutes.
Add the freeze dried vegetables and chickpeas. Bring back to a simmer for another 10 minutes. Check that all the vegetables have the consistency you want before serving.
