Four Seasons Pizza

All four seasons in one pizza! This pizza is a celebration of the seasons. It is a diverse flavor powerhouse all within the space of one humble disc of dough. A quadrant is dedicated to each season. Spring celebrates the artichoke. Summer delivers the essence of tomato. Autumn wraps us in a cozy combination of mushrooms and garlic. And winter entreats us to use the cured combination of olives and prosciutto. This dish is one tasty and savvy time traveler. Each diner gets a slice of spring, summer, autumn, and winter – in the order they prefer, of course!
INGREDIENTS
- 11” round of pizza dough (make your own or buy your favorite – you might prefer it very thin or a bit thicker)
- ¼ jar of your favorite pizza sauce
- 6 oz shredded mozzarella
- ½ jar Wildfare Madrigal Artichokes (drained and chopped bite sized)
- ½ jar Wildfare Semi Sun Dried Cherry Tomatoes (drained)
- 6 button mushrooms, sliced and sauteed in
- 1 Tbsp Wildfare Extra Virgin Olive Oil
- ½ tsp granulated garlic, salt, and pepper
- 3 slices prosciutto, torn and folded as a bed for the olives
- ¼ jar Wildfare Green Olives Stuffed with Jalapenos* (sliced in thirds along the equator)
- 1 oz grated Parmesan cheese to top
Notes:
- Eliminate the prosciutto for a vegetarian pizza
- Replace the mozzarella and parmesan with plant-based cheeses for a vegan pizza
PREPARATION

Slice mushrooms. Heat olive oil in a skillet. Saute mushrooms with garlic, salt, and pepper for 5 minutes. Set aside.

Roll out the pizza dough to an 11” disc. Rolling the dough on parchment paper that can be placed on an inverted sheet tray prevents sticking and saves clean up. Roll up the edges to form a crust – it can be as thin or thick as you wish.

Evenly disperse the pizza sauce on the pizza dough.

Evenly disperse the shredded mozzarella over the sauce.

In even quarters, place the Wildfare Madrigal Artichokes, Wildfare Semi Sun-Dried Cherry Tomatoes, sauteed mushrooms, and folded prosciutto topped with sliced Wildfare Green Olives Stuffed with Jalapenos* onto the pizza.

Sprinkle grated parmesan over the entire pizza.

Bake the pizza (on the parchment, on the inverted sheet tray) at 350 degrees for 13- 17 minutes, depending upon the thickness of your pizza dough.

Sprinkle a little more grated parmesan. Why not?

*Note: Not a fan of jalapeno stuffed olives? Replace with Wildfare Green Olives Stuffed with Red Peppers or Garlic.
