INGREDIENTS

- 1 whole chicken, broken down- Wildfare Extra Virgin Olive Oil – to coat the skillet for sauteing- 1 medium onion, diced- 1 medium red bell pepper, seeded and diced- 1 Tbsp tomato paste- 2 Tbsp sweet paprika- Salt & pepper to taste- 1 jar Wildfare Fire-Roasted Red Pepper Ajvar- Sour cream, as a garnish, if desired- Egg noodles - as a bed, if desired |

Season the chicken pieces with salt and pepper.

Dice the onion and red bell pepper. Set aside.

Heat the Wildfare EVOO in a large skillet. Sauté the chicken pieces skin side first until golden brown. Turn them over and sauté for a few more minutes. (The chicken is not nearly done at this point but has beautiful color. Move to a plate.

Add the diced onion and bell pepper to the EVOO and pan drippings in the skillet. Sauté until tender. Stir in tomato paste, salt, pepper, and paprika.

Add the jar of Wildfare Fire-Roasted Red Pepper Ajvar. Combine thoroughly.

Nestle the chicken pieces back into the skillet. Spoon sauce over the chicken. Cover skillet, reduce heat to simmer, and cook for an hour or until the chicken is tender.

Top with a generous dollop of sour cream, if desired.

Serve over cooked and drained egg noodles if desired.
