Tomato Soup

When the time of year for bountiful, fresh tomatoes has passed there is still an opportunity to capture that sweet, bright, perfectly acidic essence. Tomato soup! So comforting and so easy. Enjoy a steaming hot bowl of nourishing soup in half an hour. Make large batches and freeze some for even quicker future go-to meals.
- Wildfare Extra Virgin Olive Oil – to coat the pan for sauteing
- ½ medium onion, finely diced
- 1 small carrot, finely diced
- 1 jar Wildfare Semi Sun-Dried Cherry Tomatoes
- ½ tsp granulated garlic
- ½ tsp dried basil
- 1-1/2 cups vegetable stock (make your own or use your favorite)
- Salt & pepper to taste
- Wildfare Pistachio Pesto Finishing Sauce, as a garnish, if desired
- Feta cheese crumbles - as a garnish, if desired
- Fresh cherry tomatoes – as a garnish, if available
- Fresh basil – as a garnish, if available
Finely dice the onion and carrot.
Heat the Wildfare EVOO in a medium pan. Sauté the onion and carrots until tender.
Add the Wildfare Semi Sun-Dried Cherry Tomatoes, garlic, and basil. Combine well.
Add the vegetable stock. Stir. Salt and pepper to taste.
Buzz the mixture with an immersion blender until creamy. (You can also transfer to a blender but take care as the mixture is extremely hot.)
Transfer to bowls. Top with Wildfare Pistachio Pesto and feta cheese, if desired.
Further garnish with fresh cherry tomatoes and fresh basil, if available.
