Nut Butter & Preserve Muffins

PB&J in the multiverse? We went there. We are all familiar with the standard classic combination, but these muffins incorporate the finest nut butters and most luxurious fruit preserves in ways that will make you rethink the possibilities. Not to mention that the quality ingredients and nutritional value bring exponential happiness to your tastebuds and mood. |

INGREDIENTS

| - 2 C all-purpose flour- 1-1/2 t salt- 1 T baking powder- 1 C milk- 2 large eggs- 2/3 C sugar- 1 C Wildfare Almond Butter*- 1/3 C Wildfare EVOO- ½ C Wildfare Plum Preserves**- ¼ C sugar (to finish) |

Heat oven to 375 degrees. Spray muffin pan with no-stick spray.

Combine flour, salt, and baking soda in a large bowl.

Add milk, eggs, 2/3 cup sugar, Wildfare Almond Butter, and Wildfare EVOO to bowl. Combine ingredients on low speed of your electric mixer, until just moist. It is important not to over beat.

Fill prepared muffin cups evenly with half of the batter. Place 2 teaspoons of Wildfare Plum Preserves in the center of each muffin. Evenly divide remaining batter between each muffin cup to cover.

Sprinkle evenly with ¼ cup sugar.

Bake for 18-20 minutes. Remove from oven and cool in pan for 5 minutes.
*Wildfare Nut Butters come in a variety of flavors: in addition to Almond Butter, feel free to substitute Hazelnut Butter, Pistachio Butter, Crunchy Peanut Butter, or Hazelnut Butter with Cocoa.
