Minimal ingredients. Maximum taste! Shrimp cocktail is always a favorite. Plump, snappy shrimp smelling and tasting of the sea dipped into a sumptuous sauce with a bit of a kick! The Ajvar is a fire roasted red pepper sauce with serious depth of flavor – a wonderful base to this Mediterranean twist on a classic shrimp cocktail sauce. This dish is a marvelous start to a great meal, but can also be the meal itself. |

INGREDIENTS

- Colossal Shrimp – 16-20 per pound (Raw IQF – individually quick frozen – head off, shell on are our preferred type of shrimp but choose what makes sense for you. Check the ingredients on the bag – the only ingredient should be shrimp.)- 1 jar Wildfare Ajvar- 3 T. Wildfare Hot Sauce (Shatta)- 2 T. prepared horseradish- Lemon wedges- Chopped parsley |

If the shrimp is frozen, thaw as many as you need following the thawing directions on the bag.

Boil the shrimp just until the shells turn pink, taking care not to overcook the shrimp. This happens quickly – and no one likes rubbery shrimp.

Drain the shrimp, let cool and remove the shells. Devein if you need to. Leave just the tails on for a pretty presentation and to provide practical handles.

As you let the shrimp cool to room temperature or if you prefer, let chill in the refrigerator, prepare the sauce.

Combine the Ajvar, Hot Sauce (Shatta), and horseradish. Taste and adjust to your liking.

Plate the shrimp and sauce in individual servings or on a family style platter. Garnish with lemon wedges and parsley.
