Wings - 4 lbs. chicken wings (wingettes and drumettes)- 5 t. baking powder- ¾ t. kosher saltSauce - 4 T butter, melted- ½ C Wildfare Authentic Shatta Hot Sauce- 1 T brown sugar- ¼ t. kosher salt |

Pat the wings dry with paper towels. (You can also set the wings on a rack on a baking sheet and let dry uncovered in the refrigerator overnight. This works great if you’ve got the space and time.)

Place one oven shelf in the upper quarter of the oven and the other oven shelf in the lower quarter of the oven.

Preheat the oven to 250 degrees. Part of what makes these wings crispy is starting the cooking at a low temperature and finishing at a high temperature. The other crispifying factor is the baking powder.

Line a baking sheet with aluminum foil. Place a wire rack on the tray. Spray with non-stick.

Place wings in a large bowl and coat thoroughly and evenly with baking powder and salt.

Place the wings skin side up on the rack. Bake at the 250 degree temperature for 30 minutes.

Then move the baking sheet up to the higher shelf. Turn the oven up to 425 degrees. Bake for an additional 40 – 50 minutes, rotating the baking sheet halfway through. The wings do not need to be turned over (another bonus!). When the wings are a deep golden brown and the skin is crispy, they are ready to be sauced.

While the wings are almost done cooking, combine the melted butter, Authentic Shatta Hot Sauce, brown sugar, and salt in a bowl or large measuring cup.

Transfer the crispy wings to a large bowl. Pour the sauce over and toss to coat.

Serve with bleu cheese dressing and celery sticks. You’ll be glad you gave this recipe a “shatta”!
