Tabbouleh With Pomegranate

Brighten up your lunch mix with this easy and delightful Mediterranean tabbouleh salad! Featuring a light dressing made of our Early Harvest Olive Oil and Pomegranate Dressing, protein packed bulgur wheat, and flavorful herbs, and fresh tomatoes and cucumber, this salad will be one of your go-tos! We love it served on a bed of romaine lettuce.
INGREDIENTS
- ½ C fine bulgur wheat
- 1 beefsteak tomato, finely chopped
- 1 medium cucumber, finely chopped
- 2 bunches of parsley, finely chopped
- ½ bunch fresh mint, finely chopped
- 2 Tbsp Wildfare Early Harvest Extra Virgin Olive Oil
- 2 Tbsp Wildfare Pomegranate Dressing
- Romaine lettuce
- Pomegranate arils
- Salt & pepper to taste
PREPARATION

In a small bowl, add the bulgur wheat and ½ C of hot water. Allow to sit for about 10 minutes, until the water is absorbed.

Transfer to a larger bowl and add the tomato, cucumber, parsley, mint, EVOO, Pomegranate Dressing, and salt & pepper.

Stir with a wooden spoon, tossing and fluffing the ingredients together.

To serve, fill leaves of romaine lettuce with tabbouleh and sprinkle with pomegranate arils.

Now you have a beautiful, healthful, and delicious lunch!
