In a small bowl, add the bulgur wheat and ½ C of hot water. Allow to sit for about 10 minutes, until the water is absorbed.

Transfer to a larger bowl and add the tomato, cucumber, parsley, mint, EVOO, Pomegranate Dressing, and salt & pepper.

Stir with a wooden spoon, tossing and fluffing the ingredients together.

To serve, fill leaves of romaine lettuce with tabbouleh and sprinkle with pomegranate arils.
