Gluten Free Dressing

Dressing…stuffing…whatever you decide to call it, most people agree – it’s delicious! And if you are looking for a gluten free version, look no further. Feel free to use fresh bread cubes, half-dried bread cubes, or fully dried bread cubes. Just make sure you choose a high-quality gluten free bread you can cube yourself.
INGREDIENTS
- 8 Cups gluten-free 1-inch bread cubes (from 2 sandwich loaves)
- 2 Cups turkey or chicken stock (make your own or buy your favorite)
- 3 Large eggs
- 2 Tbsp Wildfare Extra Virgin Olive Oil
- 1 Tbsp butter
- 2 celery ribs, quarter inch dice
- 1 large onion, quarter inch dice
- 1 tsp finely chopped fresh rosemary (or ½ tsp dried)
- 1 tsp finely chopped fresh sage (or ½ tsp dried)
- 1 tsp finely chopped fresh thyme (or ½ tsp dried)
- Salt & pepper to taste
PREPARATION

Preheat the oven to 425 degrees.

Put the bread cubes in a large bowl. Heat the stock in a small pan on high heat until boiling. Reduce the heat and let simmer on the back burner.

Beat the eggs well in a medium bowl.

Set a large saute pan on medium heat and warm the Wildfare Extra Virgin Olive Oil and butter. When the combined liquid moves around the pan easily, add the celery and onion. Cook until soft and translucent, stirring constantly.

Add the rosemary, sage, stirring until they release their fragrance (about 1 minute).

Add the contents of the saute pan to the bread cubes and toss to combine. Transfer to a 3-quart casserole dish.

Slowly pour a few tablespoons of the hot stock into the beaten eggs and quickly stir until the stock is incorporated. (You’ve just tempered the eggs so they won’t scramble.) Slowly add the remaining stock, stirring continuously.

Pour the eggy stock over the dish of bread cubes. Press down on the cubes with clean hands to distribute the liquid evenly. Cover the casserole dish with foil.

Bake the dressing for 20 minutes. Remove the foil and continue to cook until the dressing is steaming hot and browned, but not dry – about 10 minutes more.

Keep warm until the dressing is able to join its magnificent meal mates on the table!
